Debian OS Stable Version [ Jessie, Stretch,Sid.. ]

Jessie is old stable, Stretch is stable, Buster is testing, SID is unstable.

Jessie, aka oldstable, as the name implies is the old stable.

Stretch, aka stable, is the current stable. It used to be “testing” while Jessie was stable. Stable generally has very few updates apart from security and any major bugs found. Everything just works together and is hence very stable.

Buster, aka testing, is the next stable. When Buster becomes stable, Stretch becomes old stable. Testing generally has constant new packages moving into it, and can sometimes have issues with bugs that can break things. Buster is fine for personal use, but I wouldn’t deploy it on a server or anything. Eventually, testing goes into a big “freeze” where there is no longer and packages migrating, and instead developers focus on fixing critical bugs. Eventually, after bugs are either fixed or packages removed Testing becomes Stable.

SID is always SID. SID is unstable. It will never become “testing.” It constantly has packages moving in and out of it, which in turn generates a lot of bugs which is why it is known as unstable. It’s very unstable.
